Double Fudge Martini

This is a real wild one but give it a try. Has one secret ingredient you probably have never heard of.

  • 1 part Chocolate Vodka
  • 1 part White Chocolate liqueur
  • 1 part Vanilla Vodka
  • 1 splash of Licor 43 **told you so.

This is a Spanish liqueur and has 43 base elements to it. It is bright yellow in colour and tastes of citrus/vanilla.

Mix all but the Licor 43 in a shaker with cracked ice and shake well. Pour into chilled martini glasses. Now add the Licor 43 to the top slowly and swirl.

McLaren’s Cheese Biscuits

These are amazing biscuits to serve with dinner. Would be a great enhancement to the Ginger Lamb Loin dinner. This recipe makes 12 biscuits.

 

  • 6 tbsp butter, melted
  • 3 3/4 cups flour
  • 1 1/2 tbsp baking powder
  • 1 1/2 tsp. baking soda
  • generous pinch of salt
  • 1/2 cup cold butter, cut in small cubes
  • 2 1/2 cups McLaren’s cheese (red tub)
  • 1 3/4 cups buttermilk

 

Preheat oven to 425 degrees. Brush large muffin tins with the melted butter, reserve remaining to brush on the baked biscuits.

In a mixer, pulse the flour, baking powder, baking soda and salt to combine. Add 1/2 cup of the chilled butter again pulsing until coarse meal forms. Transfer to a large bowl and fold in the cheese. This cheese must be broken into smaller pieces. It is so creamy it won’t grate.

Add the buttermilk and mix only until blended. This will be sticky. Divide into the muffin tins (approximately 1/2 cup each).

Bake until golden brown (25-30 minutes) and brush with remaining melted butter. Let them cool in the pan for about 10 minutes and serve warm.

In a word…scrumptuous.

Ginger Lamb in Teriyaki Sauce

This is a slightly different taste for lamb. Try it and see if you agree with my husband. It is a great flavour.

  • 1 boneless lamb loin
  • 2 tsp. Finely grated ginger
  • 1 1/2 tbsp. dark brown sugar
  • 2 tbsp. soy sauce
  • 1/4 cup white wine
  • 1 tbsp. olive oil

 

Combine all the ingredients and pour over boneless lamb loin, toss to coat and let aside for about 10-15 minutes.

In a very hot frypan cook the lamb about 3-4 minutes on each side. Add the marinade and cook for only 1 minute more.

Serve with steamed rice or baby potatoes and greens.

National Celebration Puffs

I know it is a little early, but keep this aside for Canada Day, July 4th in the United States or whatever day is your country’s day of celebration.

This will make 6 pieces so adjust if making more.

  • 1 package puff pastry shells
  • 1 cup whipping cream
  • 1/3 cup icing sugar
  • 1/4 cup sour cream
  • 1 1/2 cups of sliced strawberries, raspberries and blueberries (here you can adjust the fruit to the colours of your flag) i.e. kiwis (green or yelllow) etc.

 

Bake the shells according to the package instructions

Beat the cream and sugar together until stiff peaks form. Gently fold in the sour cream.

To assemble, spoon 2 tbsps. of cream mixture into shells, top each with 1 tbsp. of fruit and repeat the layer. Top with a tbsp. of cream mixture and berries. Sprinkle with icing sugar if you wish.

“Outlaw” Remedy Martini

When your in-laws come to visit, this would be one to serve. Get my drift?

  • 3 parts Vodka
  • 1 part Dry Vermouth

 

This is made a little differently. Place a long thin lemon twist along with an olive and 2 ice cubes in the bottom of well chilled martini glasses. Pour ingredients into a glass pitcher of ice and STIR. Pour into prepared martini glasses.

Now if this doesn’t make the ‘outlaws” a little friendlier, nothing will.

Bounce Hints Are Back…..again!

If you have a trailer, camping equipment or vehicles that are being stored for a long time, spread a few sheets of Bounce inside and it will keep mice from entering.

With warmer weather coming keep in mind, when outdoors, to put a sheet of Bounce through a belt loop to repel mosquitoes. (Think camping, picnics, walks in the forest).

The best hint of all and YES, IT REALLY WORKS….to dissolve soap scum from shower doors, clean with a sheet of Bounce.

Being pampered is Great!

Don’s eldest son is here and he wanted to cook dinner for us. He is just like his Dad. WOW! What a dinner. No slouch this boy! He can pamper us anytime. Love it.
I will try to get this recipe. It was pork tenderloin, mushrooms, capers, cream, spinach, and whatever else went into t his dish was amazing.

Whirlwind Week

The past week has been a real whirlwind. Last Saturday and Sunday we had two special dinners for family visiting. My sister-in-law was here for a week (so they tell me) it seemed like one day actually. Big dinner last night at Don’s niece and today Don’s oldest son is staying overnight and off to Oliver to see our new house and then back again. THEN it will be back to normal, whatever that is. Time? Where Does It Go?

We have had my wonderful sister-in-law stay with us for a week. This is day 4 and seems like it should be day 1. ???? We have travelled up and down the highway going here and there, eating out, (last night at the Keg), tonight going to dinner and watching the Harlem Globetrotters. We have packed up more “stuff”, bought tons of material to make tablecloths with, and tomorrow we are, again going to dinner, this time at her daughters. Alas….that means we have to take her back,

A Very Busy Two Days

The dinner on Sunday comprised of a:

  • Crown Roast of Pork with a mushroom, apple, rice Dressing, gravy,
  • Mashed Potatoes with attitude,
  • Spring Carrots with partial stems, creamed Corn,
  • Steamed pencil-thin Asparagus,
  • Colourful Pepper Salad,
  • Semi Freddo Mousse with fresh Melon and Berries,
  • and our lovely grandaughters brought chocolate dipped Strawberries with artful designs on them.

What a meal! What a Day! What fun! What love!

Yahaoo! Lunch With My Daughter…..Again!!!

My daughter lives in another Province and we usually only see each other once a year but she is coming here today for a visit and early supper. Here’s what’s cooking…

  • Signature Martini, of course
  •  Caesar Salad
  •  Seafood Lasagne (all calories removed, ahem…
  •  Chocolate Canolis
  •  Coffee

Not too bad for a rainy Saturday and then tomorrow we have a big family dinner in honour of my husband’s sister who is coming to stay a week with us. Tomorrow I will show you the menu. WOW!

Bounce Tips Are Back

If you sew, this one will help you. To prevent thread from tangling, run a threaded needle though a sheet of bounce before beginning your task.

If you are cat lovers/owners, you can collect cat hairs by wiping couches and chairs with a sheet of Bounce and they will magically and magnetically adhere to the Bounce.

After a camping trip, place a sheet of Bounce in each of the sleeping bags and one in the tent before storing. No musty, old campfire smells when you are ready to go again.
