Papaya Scones

When the girls pop over for coffee in the morning or your Mother-in-law shows up for tea in the afternoon, treat them with these.

 

  • 2/3 cup buttermilk
  • 1 egg
  • 3 cups flour
  • 1/2 cup sugar
  • 4 tsp. baking powder
  • 1/2 tsp. baking soda
  • pinch of salt
  • 1/2 cup butter (cold, so you can grate it)
  • 1/2 cup dried papaya, chopped
  • 1/4 cup golden raisins
  • 1 tsp. grated lime zest
  • 1 tbsp. softened butter
  • Butter, (you might even want to use a flavoured butter, listed on this site)
  • Preserves of your choice

Preheat your oven to 375 degrees.  Pour the buttermilk into a measuring cup and beat in the egg.

In a large bowl, blend together the flour, sugar, baking powder, baking soda and salt.  Grate the butter into the flour mixture and bring together with your hands.

Add the papaya, raisins,  zest and stir to mix.  Add the buttermilk all at once and stir until a soft dough forms. At this point, you may have to add up to a 1/4 cup of buttermilk.

Turn the dough onto a floured board and knead 6-7 times until well mixed. Pat out until it is about 1″ thick.  Dip the rim of a glass in flour (no bigger than 2″) and cut out the scones.  Place them on a parchment lined pan and bake anywhere from 18-20 minutes.  Brush the tops with the softened butter and serve warm with fresh butter and preserves.

Of course, this sounds like tea should be served along with them. Your choice.

 

 

Raspberry Kuchen

This is delicious and is best when served warm.

 

  • 1 egg, beaten
  • 1/2 cup sugar
  • 1/2 cup milk
  • 2 tbsp. Crisco oil
  • 1 cup flour
  • 2 tsp. baking powder
  • 1  1/2 cups fresh raspberries

Preheat oven to 375 degrees.  Mix the first four ingredients together.  Sift the flour, baking powder and stir into the egg mixture.  Pour into a greased 8 inch cake pan. Sprinkle the raspberries over the surface of the batter.

 

Topping

  • 1/2 cup flour
  • 1/2 cup sugar
  • 3 tbsp. butter
  • 1/2 tsp. almond flavouring

In a small bowl, mix the flour, sugar and almond flavouring.  Cut the butter in until it resembles coarse crumbs.  Sprinkle topping over the raspberries.  Bake for about 30 minutes until the cake tests done.

To be fair you do have to share…call a friend, family at dinner, invisible friend(s) depending on how much you can eat.  Just kidding!

Thyme and Lemon Tea Loaf

This is a unique and  yummy tasting tea loaf. I love it for sure. Definitely one of my most favourite.

This makes one loaf.

You will need:

  • 3/4 cup milk
  • 1 tbsp. minced fresh thyme
  • 1/2 cup softened butter
  • 1 cup sugar
  • 2 eggs
  • 2 cups flour
  • 1 1/2 tsp. baking powder
  • pinch of salt
  • 1 tbsp. lemon juice
  • 1 tbsp. grated lemon peel

Preheat oven to 350 degrees. Combine milk and thyme in a bowl and microwave, uncovered, for one -two minutes or until bubbly.  Cover and cool to room temperature.
In a large bowl, cream butter and sugar.  Add eggs, one at a time, beating well after each one. Combine the flour, baking powder and salt;  add to the egg mixture alternating with the milk mixture. Stir in the lemon juice and peel.

Pour into a 9″ x 5″ x 3″ prepared  loaf pan. Bake 40-45 minutes or until a toothpick inserted in the middle comes out clean. Cool for ten minutes before removing from pan.

In a small bowl, combine 1/2 cup icing sugar and t tbsp. lemon juice and drizzle over the loaf.

All you need now is a good book, pot of tea and this. Heaven-made afternoon, I say.
