Teriyaki Chicken With Rice Salad

This is a nice way to update the lowly chicken on a hot summer day. It is easy and quick.

 

  • 3 tbsp. soy sauce
  • 2 tbsp. liquid honey
  • 6 tbsp. rice vinegar, divided
  • 1  garlic clove, grated
  • 4 cups cooked rice
  • 1 cup sliced cucumber, peeled and seeds removed
  • 1 tbsp. toasted sesame oil
  • 2 chicken breast cutlets

In a small saucepan combine the soy sauce, honey, 1 tbsp. rice vinegar and garlic clove. Bring to a boil and reduce by half.

Toss together the cooked rice (cooled down, of course), cucumber, 5 tbsp. rice vinegar and sesame oil.

Grill the chicken cutlets,continually brushing with the soy sauce mixure and turning often, until cooked.

Spoon the rice salad on plates and slice the chicken cutlets and serve on top. This recipe will serve 4 people.

Add sliced tomatoes, cheese and basil, sprinkling with balsamic vinegar. Add a warm dinner roll, glass of wine and the evening begins. Have fun and enjoy!

 

 

 

Don’s Famous Barbecue Salmon

My husband has been making this for years and years. It is sooooooo good you will be telling people it is yours….not!  Try it and you will see for yourself.

 

  • 6-8 lbs. fresh salmon
  • 1/4 cup soya sauce
  • 1/4 cup rye whiskey (yes, indeed)
  • 1/2 cup good olive oil
  • fresh ground pepper
  • 1 heaping tsp. garlic powder

Beat the ingredients together (but not the salmon) until foamy. Clean the salmon, removing all the bones with pliers. Be sure to double check to make sure you didn’t miss any.

Cut the salmon into 2 1/2 inch widths,  place them in a 13 x 9 baking dish and pour the marinade over. Cover and marinate for 4-5 hours.

Make sure the grill is VERY hot before putting the fish on, skin side down and wiggle (the fish, not you). When all the fish is down, go back and turn the first piece.  Skin will be stuck to the grill so just remove it and discard (the skin not the fish).

After this has been done to all the fillets, pour the remaining marinade over the fish and continue to cook.  This is salmon, DO NOT OVERCOOK.

Fabulous! Needs only a nice cold salad and a crispy, cold glass of Pinot Gris. Ahh!

Sauce for Wings

Yesterday we were at a block party and took a pile of wings and two sauces. You will get a big giggle out of this one sauce.

Get ready….it is really difficult. Jen, are you writing this down (Jen was suggesting I give out the recipes. Jen is a really failthful follower of this site). This is one for today.

 

  • 1/2  cup Mikee Wasabi Teriyaki sauce
  • 1/2  cup Diana Sauce.

Mix well together.

There wasn’t one drop of sauce or so much as a crumb of the wings left. Next?

Recipes don’t have to be difficult just taste good.
