Eggnog Cheesecake

Many, many recipes for this cheesecake but it really has a nite ‘bite’ with a gingersnap crust.

 

You will need:

  • 48 finely ground gingersnaps
  • 1/4 cup brown sugar
  • 1/4 cup melted butter
  • 4 pkgs. Philadelphia Cream Cheese, room temperature
  • 4 large eggs
  • 1/2 cup white rum
  • 2 cups cold commercial eggnog
  • 2 cups icing sugar
  • 2 tbsp. flour
  • 1 cup whipping cream
  • 1/2 cup additional eggnog
  • freshly ground eggnog

Stir the first three ingredients together and press into a 9″ springform pan.

With your mixer, beat the 4 pkgs of room temperature cream cheese until smooth then proceed with the 4 eggs, beating in after each one, mix the icing sugar and flour together and add to the mixture.  Pour into the springform pan.

Wrap the pan in tin foil and set in a larger pan with boiling water halfway up the springform pan.  Bake at 325 degrees for 1 hour. Remove from the water bath and let sit in the oven , with the door closed, for an additional hour.  Remove to a rack . Cover and chill for at least 8 hours.

Beat the eggnog and whipping cream together and grate fresh nutmeg across the top.

Holiday Martini

You should start with a signature drink when your guests arrive. Then, we offer wine for the rest of the evening.

You will need:

  • 6  parts eggnog
  • 2 parts vanilla vodka
  • 1 part Baileys liqueur
  • 1 part white chocolate liqueur

Filled a shaker with crushed ice add the ingredients and shake for a couple of seconds.  Strain and pour into chilled martini glasses.  Sprinkle a hint of cinnamon on top, make a toast and your evening has begun.

It is a simple recipe but oh, so, good!

Cinnamon Vodka Martini

I know, it is not Christmas….but you will have this at the ready WHEN it does come. Right?

I mentioned on FB that it was only 5 months to Christmas and I thought I would get creamed but more and more people are on top of it than I ever thought would happen.

 

  • 4 cups eggnog
  • 2 tbsp. unsweetened cocoa powder
  • 1/2 tsp. cinnamon
  • 1/2 cup grated semi sweet chocolate
  • 8 oz. cinnamon vodka

In a large saucepan, combine the eggnog, cocoa and cinnamon and stir (whisk) until thoroughly combined. Heat only until it simmers NEVER boils.

Add the grated chocolate and stir until it is melted. Remove from heat and add the vodka. Now pour into chocolate (melted) rimmed heat-proof glasses,  garnish with a stick of cinnamon.

Toast the weather, season, rain or snow….really anything will do. Go for it.

Cold Outside, Fireplace Inside and….

For the cosiest of time and the loveliest of drinks, go for this one. I could call it a martini but we would be lying. It takes heat proof glasses….

You will need (if serving 6)

 

  • 4 cups eggnog,
  • 2 tbsp. unsweetened cocoa powder,
  • 1/2 tsp. ground cinnamon
  • 1/2 cup grated semi-sweet chocolate
  • 8 oz. cinnamon vodka

Garnish: cinnamon sticks and more grated chocolate.

 

In a large saucepan, combine eggnog, cocoa and cinnamon and whisk together until combined. heat until it simmers only (NOT BOIL). Add the chocolate and whisk together until melted. Remove from heat and add the cinnamon vodka. Pour into heat-proof glasses or mugs that are rimmed with grated chocolate. Garnish with a cinnamon stick.

What gingerbread  house? what Christmas turkey…you get the picture. Drink responsibly and really enjoy the moment and the season. Anyone for jammies and popcorn?

The Holiday Martini

Last night when my friend was over, I made a Holiday Martini. Always remember to chill the glasses.

  • 6 parts commercial egg nog
  • 2 parts vanilla vodka
  • 1 part Baileys
  • 1 part Creme de Cacao

Pour into shaker filled with ice, and shake for a few seconds. Strain and sprinke a teeny amount of fresh grated nutmeg on top. One sip and she said “yummmmmm, tastes like another”.

Another successful venture into the martini world.
