Remoulade Sauce

Another word for Tartar Sauce. Trust me, if you make this you will NEVER again buy the stuff in the store.

 

  • 3/4 cup mayonnaise
  • 2  1/2 tsp. Dijon mustard
  • 1 tsp. pure freshly squeezed lemon juice
  • 1/4 tsp. tarragon
  • 1/4 tsp. dillweed
  • 1/2 tsp. dried parsley
  • 2 tbsp. green relish

Combine all the ingredients in a small bowl. Cover and refrigerate over night. If anything is left over, store in an airtight container.

Serve with your fish fillets of choice, making sure not to overcook.

This is a food-marriage  for sure.

Ketchup-Homemade

This is summer….lots of hot dogs and hamburgers on the bbq. If you run out of the commercial stuff, make this one up. It’s good.

 

  • 1/2 cup tomato paste
  • 1/4 cup water
  • 1/8 cup vinegar
  • 1/8 tsp. cinnamon
  • 1/8 tsp. cloves
  • 1/8 cup sugar
  • 1/8 tsp. onion powder

Mix together in a small saucepan and bring to the boil. Remove from heat and put into a small container. This only makes 1/2 cup, so you may want to double, triple etc all the ingredients, after you try the first lot.

Strong Winds Martini

Haven’t posted a good martini for awhile. Sorry, been busy baking. Here is one you will like. Makes a pretty drink.

 

  • 4 parts Grey Goose Vodka
  • 1 part Grapefruit Juice
  • 1 part Mango Nectar
  • 1 part lime juice

Pour all ingredients in a shaker filled with cracked ice and shake well. Strain into chilled martini glasses.

NOW, using the back of a spoon inserted into the martini glass side, slowly drizzle Cranberry Juice concentrate to create layers.( Like a Pousse Cafe, except it is a martini.)
