These are a fabulous appetizer served in martini glasses. You can, if you wish, eat the scallops then drink the spicy vodka.
- 1/2 cup vodka
- 1/4 cup lime juice
- 2 tsp. jalapeno pepper, chopped
- 12 large scallops
- salt and ground pepper
- 1/4 cup finely chopped red bell pepper
- 1/4 cup finely chopped yellow bell pepper
- 1 green onion, finely chopped
- 4 sprigs of coriander
Combine vodka, lime juice and jalapeno pepper in a bowl.
Heat oil in a skillet over high heat and after seasoning the scallops with a pinch of salt and pepper, place in the skillet. Sear for about 2 minutes per side or until browned on the outside but still raw in the center.
Place the scallops on a board and cut into quarters. Add to the vodka mixture. Let marinate for 4 hours in the refrigerator, stirring to coat all sides.
Stir in the peppers and green onion.
Divide between the scallop mixture in 4 martini glasses, adding some of the marinade. Garnish with the coriander. Serve immediately.

Engagement Martini
My niece just got engaged so this is for her and her man to celebrate with. Take a few minutes, light the candles, turn on some mood music and try this…..Terra, this is for you.
- 1 part Vodka (I think Grey Goose is the best)
- 1 part Godiva White Chocolate Liqueur
- 1 part Bols Apricot Brandy
Put in a shaker filled with crushed ice, shake for a few seconds, and strain into chilled martini glasses. Garnish with a cherry.
Make a toast for your future together (and damn the rest of the outside distractions), make just one more and then …….dance the night away.
He is one lucky man but I guess he knows that already.
Tropical Hawaii Martini
Okay,with115 more sleeps to go, my mind sorta wandered to Hawaii…again! Such fun..try this one and see if you don’t smile a lot. It takes only 4 items and you could swear you are already there once you consume it.
- 3 parts Grey Goose Vodka
- 3 parts white rum
- 1 part Bols Coconut Liqueur
- 1 part Bols Banana Liqueur
In a shaker filled with cracked ice, shake all the ingredients well and strain into chilled martini glasses. Put on your bikini, flip-flops and dream…..
If you need a garnish (forget the umbrellas) add a slice of banana that you have dipped in lemon juice so it won’t turn brown . I, on the other hand, would prefer to dip it in the vodka.

Martini For Maui
I was looking at the calendar this morning and, oh my, the thought of Maui came to mind. Here is a signature martini to make and then…dream a lot, hope even more and start counting the days.
- 4 parts Grey Goose Vodka
- 2 parts spiced rum
- 2 parts white rum
- 1 part Blue Curacao
- 1 part mango juice
In a shaker filled with crushed ice, pour in all the ingredients and shake for a good 10 seconds.
Strain and pour into chilled martini glasses. Garnish with a piece of mango and a maraschino cherry.
Now, doesn’t that make your mind wander to Maui? Oh wait..why not plan a luau on the deck while we still have beautiful weather?

Butterscotch Cream Martini
It is a funny thing for us, when your company from another Province does not drink either wine or beer. So….back to making martinis. It has been awhile but I wanted to change it from one I made her the day before. I did not know just how really good it was going to be.
Oh yeah…..it is good.
- 1 shot whipped cream vodka
- 2 shots white chocolate liqueur
- 1 generous shot of butterscotch schnapps
In an ice filled shaker add the ingredients above and shake for 10 seconds. Strain into a martini glass that has butterscotch swirls added.
Serve immediately and watch the reaction. Wow! It is truly yummy.
Mango Sour For New Year’s Eve
What a neat cocktail this is to welcome in the New Year.
This will make 6 drinks…adjust to numbers in your home.
- 1 cup mango nectar
- 3/4 cup vodka
- 1/2 cup fresh lemon juice
- 3 tbsp. berry sugar (superfine)
Stir together the nectar, vodka, lemon juice and sugar in a 1 qt. glass measure.
Pour half of this into a shaker filled with crushed ice and shake for 30 seconds, strain and pour into chilled old fashioned glasses. Repeat for the remaining nectar mixture.
Garnish each glass with a fresh mango spear. Serve…take a bow and from me to you, HAPPY NEW YEAR,
Trevor-tini
My husband’s son, Trevor, thinks I can’t make a good classic martini (I prefer the sweeter kind). Well, Trev, this is one for you. Try it out and tell me what you think. It is a classic.
- 1 part lemon vodka
- 1/4 tsp. freshly squeezed lemon juice
- 4-5 drops dry vermouth
- lemon twist
Pour the ingredients into a shaker filled with cracked ice and shake well. Strain into chilled martini glasses and garnish with a lemon twist.
Alphabet Martini
This just about has the kitchen sink in it. It is rather tasty for sure and your guests might try to sneak a way to lick the glass, trust me!
- 1 part Grey Goose Vodka
- 1 part Bailey’s
- 1 part Chambord
- 1 part Strawberry Schnapps
- 1 part cream
- strawberry/raspberry on a pick for garnish
Pour all the ingredients into a shaker filled with crushed ice. Shake for a few seconds then strain into well chilled martini glasses.
To garnish, lay a cocktail pick with a fresh strawberry and raspberry on top.
Winter Warm-Up Martini
I couldn’t resist this one. I keep thinking of where I came from and in the winter you would have to plug in your car and make sure it was filled with anti-freeze. This will do the same thing, only from inside the house, looking out!
- 6 parts Vodka
- 2 parts Blue Curacao
- 2 parts Midori Melon liqueur
- 1 part pinepple juice
Pour all the ingredients into a shaker filled with crushed ice and shake for a few seconds.
Strain into chilled martini glasses and garnish with a lime twist.
Now, don’t you feel all warm and fuzzy? That’s enough for now!
The Glam Martini
Glam…glamourous…yummm!
- 6 parts Grey Goose Vodka
- 5 parts fresh Orange juice, no pulp
- 1 part mango nectar
- 6 parts grapefruit juice
- 1 part Grand Marnier
Pour ingredients into shaker filled with cracked ice and shake well. Strain into chilled martini glasses. Garnish with a thin orange slice.
Sounds good, tastes great. Try it!
Hazelnut Martini
This only has three ingredients, but it is really tasty.
- 6 parts vanilla vodka
- 1 part Franjelico
- 1 part white Godiva liqueur
Pour ingredients into a shaker filled with crushed ice and shake until cold. Strain into chilled martini glasses that have been rimmed with Franjelico and crushed hazelnuts.
Besides being oh so good, it really is yummy.
I’m Back With A New Martini-Called Rasp’y Cafe
This is a fruity Martini made with the taste of Raspberries.
It is simple but tasty, here goes:
- 2 parts Raspberry Vodka
- 1 part Creme de Framboise
- 1 part Tia Maria
Pour into shaker filled with crushed ice. Shake a few seconds to completely chill and pour into chilled martini glasses. Garnish with 2 fresh raspberries and chocolate shavings.
Of course it tastes great. okay….you twisted my arm…another? hmmm
