Mexican Style Chicken

On a hockey night or Football Sunday, this would be a wonderful dinner to put up following the guacamole and tortillas. It follows through for a  theme day and is truly tasty.

 

  • 1 cup taco sauce , chunky style
  • 1/4 cup Dijon mustard
  • 4 tbsp. fresh lime juice
  • 2 tbsp. butter
  • 6 chicken breasts, boneless and skin removed
  • 6 tbsp. plain greek yogurt
  • 1 large lime, cut into 6 sections
  • 3 tsp. chopped cilantro

In a bowl mix together the taco sauce, mustard and lime juice  really well and add the chicken, turning over to completely coat. Cover with plastic wrap and marinate for 1 hour.

In a large skillet, melt the butter over a medium temperature until it begins to foam. Remove the chicken from the marinade and cook in the skillet for 18-20 minutes, turning over so both sides begin to brown. Now add the remaining marinade and cook for another 8-10 minutes. Remove the chicken to a platter and now raise the heat under themarinade and boil for 1 minute.

When ready to serve, slice the breasts and fan out on individual plates,  pour the sauce over and also place dollops of the yogurt on top. Place the lime segments around and sprinkle with some of the cilantro. Serve along with rice and a chilled salad. Yum!

 

 

Changes Being Made

For anyone new to this page, please know that, after almost 8 years of doing this, we are now trying to put pictures to recipes. The reason it wasn’t done as much before is we would put the camera on the counter, say a trillion times that day, we can’t forget to take pictures and you guessed it. Meals eaten and then hear “Oh no, we forgot to take the pictures.

So bear with me, we will play catch up as much as we can and as soon as we can.

 

Grapes of Wrath Mocktini

This is a fun drink to make to all dd’s and those who prefer not to drink the other kind of martini, you will need:

  • 1  part white grape juice
  • 2 parts sparkling “Fre” white wine
  • 1 splash of lime juice

Pour all ingredients into a shaker filled with cracked ice and STIR gently. Strain into very cold martini glasses and garnish with 2 -3 frozen green grapes. Voila!

No one needs to know there is a difference between the drinks. Enjoy!

Whirlwind Week

The past week has been a real whirlwind. Last Saturday and Sunday we had two special dinners for family visiting. My sister-in-law was here for a week (so they tell me) it seemed like one day actually. Big dinner last night at Don’s niece and today Don’s oldest son is staying overnight and off to Oliver to see our new house and then back again. THEN it will be back to normal, whatever that is.
