Scrumptuous Breakfast On The Fly

This is a wonderful weekend breakfast when you have more than 5 minutes to eat and run.( Not a spelling error above, just being silly to see if you even notice.)

  • 2 tbsp. Crisco Oil
  • 1 tbsp. butter
  • 4 yellow gold potatoes, peeled and cut in 1/2 inch cubes
  • Sprinkle of Joe’s Stuff Seasoning (generous)
  • pinch of salt
  • 4 eggs
  • hot buttered toast OR
  • toasted bagels

Mix the first 5 ingredients together and cook, stirring until all are golden brown and cooked through. Place in the oven, set on warm, to go to next step.

This is the easier of the two steps. In the same fry pan, crack 4 eggs and add a few drops of water in the pan and cover. Cook for about 1 – 1 1/2 minutes, until the whites are no longer runny.

On 4 plates, divide the potatoes equally and top with an egg.  Add the toast or bagel and pour a cup of freshly brewed coffee and a glass of fresh juice.

Oh yes…..what a way to start the day.

Iced Coffee

Okay Tim Hortons and Starbucks….move over. Now you can make this luscious coffee at home. Doesn’t cost $5.00 to make and is, and excuse the pun, too cool! Just watch the brain freeze though. You can also make it “adult” coffee by adding a shot of white chocolate liqueur…..just sayin’.

 

  • 1 cup sugar
  • 1  1/2 cup whole milk
  • 1 vanilla pod
  • 1  1/2 cup cold coffee
  • 3/4 cup whipping cream (unsweetened)

Combine the sugar, milk and vanilla pod in a saucepan and boil to dissolve sugar.

Remove from heat and let stand until cold. Remove the pod and wash it off and let completely dry.

Combine the milk mixture, coffee and cream and mix well. Pour into fridge trays, and freeze until partially frozen. (not ice cube trays, freezer trays)

Pour into chilled glasses 2/3 full and now top with a sweetened whipping cream and drizzle either chocolate or caramel over this.

Now sit down, get a book or invite a friend over to also enjoy and simply…sip…..ummmmmmm.

Yummy.

 

Impromptu Dinner With Our Neighbour

Yesterday morning my husband brought up a bag of frozen  Heritage tomatoes we put away last summer and asked me what I thought he should make. I immediately said “Bolognese sauce” and we went from there.

I looked across the street at my neighbour’s house and said we should invite her tonight. Now, this is on-the-spot- dinner planning (at it’s best, I may add).

Menu should be simple but tasty, right?
Okay, here we go….cheese and crackers with a glass of wine and conversation. Now we leave the comfy and warm livingroom and enter the breakfast room.

Then a terrific crisp salad with Don’s special dressing to start the dinner off. On the table we have a small plate with oil and  fig/balsamic vinegar. In this you dip fresh baguette slices….yummmmmm. Now it begins…

  

 

 

 

 

 

Once the salad is finished, the pasta and sauce is next. Now let me tell you….you can’t get enough of that sauce. Good grief, it is sooooo good.

More wine, conversation and now dessert. Don told me I had to make something that would go wtih the pumpkin ice cream we had in the freezer. Okay, thinker on….skimming through all the desserts I have on my site  I found one. Sticky Toffee Pudding with caramel sauce. Add a scoop of the pumpkin ice cream and it was fabulous! Watch the presentation, of course.

Table was set…take a peek. This was done with our “kitchen” dishes. As I have always said….treat any and all who enter your home like royalty and you will always do your best, make your best, and feel your best.

It was a fun night. We looked through my cook book “The B & B Cookbook” and chatted even more. A couple  cups of coffee later, the evening came to a close. No fuss really, just simple but welcoming and friendly.

Cinnamon, Pecan and Cranberry Scones

This is a real nice recipe to make. I took this from my cookbook “The B & B Cookbook”.  It makes 6 wedges.

 

You will need:

  • 1/4 cup heavy cream, plus extra for brushing scones
  • 1 large egg yolk
  • 1/2 tsp. vanilla
  • 1 cup flour
  • 3 tbsp. sugar,  plus extra for sprinkling on scones
  • pinch of salt
  • 1  1/2 tsp. baking powder
  • 1/4  tsp. baking soda
  • 1/2  tsp. cinnamon
  • 3 tbsp frozen butter, grated (makes for fluffier scones)
  • 1/2  cup chopped pecans
  • 1/2 cup dried cranberries

 

Preheat oven to 400 degrees.

In a small bowl whisk together 1/4 cup of the cream, egg yolk and vanilla.

In another bowl, sift the flour, 3 tbsp. sugar, 1/2 tsp. vanilla, pinch of salt, baking powder, baking soda and cinnamon.   Add the butter and gently stir to mix. Stir in the pecans and cranberries.

Add the cream mixture and stir with a fork until it forms a sticky dough, but still manageable. Knead the dough on a lightly floured surface for about 30 seconds. Pat into a 3/4 inch thick round and cut into 6 wedges.

Transfer the wedges to a parchment lined baking dish. Brush each one with the extra cream and sprinkle with some sugar.

Bake the scones in the center of your oven for about 15-18 minutes or until a light golden.

The only thing needed here is some fresh butter and jam, a spot of tea or a good cup of coffee. Oh, yes, and having a good friend to share it with is an excellent idea.

Coffee “2” Martini

Okay, okay, I used the word martini a little loosely, but since I only deal with martinis, I couldn’t do it any other way.  On a cool/cold evening, sitting in front of a fireplace with a blankie over your lap this is the drink of choice…

 

You will need

  • 3 parts coffee vodka
  • 1 part Frangelico
  • 2 parts HOT coffee

 

Pour ingredients into a heat proof container and gently stir. Now pour into fancy coffee mugs and top with whipped cream and a finely chopped, roasted hazelnut.

Hmmmmm….maybe another one would take the chill off the night, especially at the lake/camping, as this is just plain comfort food. Well, at least the hazelnut counts as food, doesn’t it?

Chocolate Fudge Martini

You will need for this one:

  • 6 parts chocolate vodka
  • 1 part coffee liqueur
  • 1 part chocolate liqueur

Pour ingredients into a shaker with cracked ice and shake well. Strain into chilled martini glasses. Garnish with a chocolate covered coffee bean.

You will be the hostess that everyone wants to be when you serve this one.
