Tenderloin For All Occasions

 

 

Serves 4

  •  2 pork tenderloins
  • 4 tbsp. honey
  • 2 tbsp. brown sugar
  • 2 tbsp. cider vinegar
  • 1 tsp. mustard
  • 1/8 tsp. ground nutmeg

Preparation:

Preheat oven to 375 degrees

This is really simple-place the tenderloins in a roasting pan (silver skin removed) and combine all the ingredients and pour over the tenderloins. Roast in the oven for about 25 minutes or until a meat thermometer reaches 155 degrees. You can also add blueberries and a touch of cinnamon to the sauce. If you do, be sure to add a little butter as well to make it glisten.

Remove from oven and let rest for five to eight minutes. Slice thin and serve, spooning any drippings over the sliced meat.

This doesn’t get any easier, but it tastes like it took more.

 

Creamy Cauliflower Soup

  • This is one good way to get your vegetables. Serve this for your company and get raves.

You will need:

 

  • 2 tbsp. butter
  • 1 small onion, finely diced
  • 1 garlic clove, minced
  • 4 cups good brand chicken stock
  • 1 medium cauliflower, cut into florets
  • 1 bay leaf
  • 2 stalks celery, ribs removed
  • 2 cups whipping cream
  • freshly grated nutmeg
  • pinch of salt and pepper

 

In a large saucepan, saute butter and onion until soft and golden. Add garlic and cook another minute. Add stock and bring to a boil.

Reduce heat to a simmer, add celery, cauliflower and bay leaf. Cook about 10 minutes or until cauliflower is tender. Remove bay leaf.

Pour ingredients into a blender (small batches) and puree. Return to saucepan and add the cream, and season to taste with the nutmeg, salt and pepper. If the soup is too thick, lighten with a little half and half cream.

Ladle into pretty soup bowls and place 3 small crackers on the plate.

French Breakfast Puffs

This recipe is from my cookbook “The B & B Cookbook”.

This makes 6 Puffs

 

  • 1 1/2 cups flour
  • 1/2 cup sugar
  • 1 1/2 tsp. baking powder
  • 1/4 tsp. ground nutmeg
  • pinch of salt
  • 1 large egg
  • 1/2 cup milk
  • 1/3 cup melted butter
  • 1/4 cup sugar
  • 1/2 tsp. ground cinnamon
  • 1/4 cup melted butter

 

Preheat oven to 350 degrees. In a mixing bowl combine first five ingredients and make a well in the center. In another bowl, beat egg slightly, add milk and melted butter. Mix together and add to the dry ingredients. Stir only until moistened (will be lumpy).

Grease muffins tins, fill with batter. Bake 20-25 minutes or until golden.

Combine 1/4 cup sugar and cinnamon together. Immediatly dip the baked muffins into the melted butter and then into the sugar-cinnamon, Serve warm.

Truly a real winner. ALMOST like a beignet only without the deep frying.
