When entertaining, Brie is the ‘go to’ food to serve with crackers and, of course, some wine. Just have napkins, small plates and utensils for serving.
- 1/2 cup finely chopped sun-dried tomatoes, drained
- 1/3 cup finely chopped pistachios (shelled of course)
- 1/4 cup chopped fresh Italian parsley
- 3 tbsp. grated Asiago cheese
- 2 tbsp. oil from the tomatoes
- 1 garlic clove, minced
- 1 lb. round Brie cheese
- crackers/toasted baguette slices
Combine the first six ingredients together in a bowl. Set aside.
Preheat oven to 350 degrees.
Place the cheese on a parchment paper lined baking sheet and carefully pile the tomato-nut mixture on top. Bake in the oven for about 15 minutes, until the Brie feels soft on the edge. Using a large spatula (or two) carefully transfer to a serving platter and surround with crackers/toasted baguettes.
You soon will have the reputation of being the ‘hostess with the mostess’. Go for it.
Caramelized Onion, Spinach and Brie Tart
Brunch in the summer makes this a good choice. While you have this in the oven, go and change out of your jammies put on your Company’s coming brunch clothes and you are ready. Table has been set, candles lit and all is on the table for your guests to dive in.
- 1 frozen pie crust (I said easy)
- 1 tbsp. butter
- 1 onion, thinly sliced
- pinch of salt
- 2 cups baby spinach
- 1 cup Brie, cut into 1 inch cubes
- 1 cup whipping cream
- 3 extra large eggs
Preheat oven to 400 degrees. Set pie shell on baking sheet. Bake as directed. Remove from oven. Set aside. Lower oven temperature to 350 degrees.
Melt butter in pan, add the onions and a pinch of salt. Stir frequently reducing heat if needed. Cook until the onion are golden and VERY tender. About 10 minutes. Set aside to cool. Stir in the brie.
In medium bowl, whisk the cream and eggs and pinch of salt and pepper. Scatter the onions over the bottom of the cooled pie shell. Slowly pour the egg mixture over and bake for 35 minutes until set. Cut in wedges to serve.

It’s getting to be that time!
The invites are starting to come fast and furious and you don’t know what to do. First, don’t panic. Grab a coffee and write a few things down. Who, What, When, Wear (no mistake) and we all know the Why.
Set the ambience for the evening and get the signature drinks ready to be made, and serve this, as a great starter.
Pear Toasties
Slice a baguette in horizontal slices and lightly toast one side. Place a thin slice of ham, top with sliced pears and add a wedge of brie, a light sprinkle of pepper and heat in the oven for about 5 minutes. Oven should be 475 degrees.
If you wish, change it by using sliced fresh apricots and camembert cheese.
